College Cooking: Egg-in-the-hole pancakes

Breakfast is the most important meal of the day.
This is a tried and true cliché that has been burned into the minds of children across the country.
But as people get older, breakfast often takes a backseat in the hustle and bustle of young adult life. Why not combine three of the most popular breakfast items into an easy-to-make, quick breakfast to start the day off right?
Once the ingredients are compiled, the dish takes about 5 minutes to cook and ingredients can be bought at the grocery store for less than $15.
Ingredients:
Pancake mix
Bacon
Eggs
Butter
Syrup
Directions:
First, cook the bacon either on the stove or in the oven at 350 degrees for about 20 minutes.
While the bacon is cooking, in a large bowl combine pancake ingredients and follow the instructions listed on the package. Mix until batter is smooth.
Once the bacon is cooked, place on a paper towel-lined plate to drain excess grease.
Heat a greased stovetop pan to medium heat and pour in desired amount of pancake batter.
Allow the pancake to cook for about three to four minutes or until air holes form on the top.
Flip the pancake over and cut a small round hole into the middle. Crack one egg directly into the center of the pancake.
Cook the egg for about 4 minutes or until the egg white appears solid. Flip pancake once more and cook for 10 seconds for an over-easy egg (when you cut into the pancake, the yolk should spill out).
Serve immediately with butter and syrup and enjoy.
