For those long days at 35Denton, a healthy, filling and delicious snack is a must. These chocolate chip granola bars are not only easy to make but also inexpensive. This recipe is similar to rice crispy treats. Replace the cocoa cereal with any cereal for a personalized snack.


1/4 cup butter

1/4 cup honey

1/3 cup packed brown sugar

2 cups quick cooking oats (not rolled oats)

1 cup cocoa crispy rice cereal

1/2 teaspoon vanilla

2 tablespoons mini chocolate chips


Combine the butter, honey and brown sugar over medium heat until the mixture becomes syrupy and starts to bubble. Slowly add the vanilla extract.

In a separate bowl, mix the quick oats and the cocoa cereal.

Slowly add the sugar, butter and honey syrup to the oats and cereal and mixture. Mix well.

Pour the granola mixture into an 8×8 pan lined with wax paper and press tightly. It should be about 3/4” thick.

Let the mixture cool for a couple of hours. If the granola mixture is still crumbly, place it in the fridge until it hardens.
